Edgar found his excitement in cooking later in life but once he realized it, he knew it was his craft. He was born in El Paso, Texas, spent his childhood in Ciudad Juarez, Mexico, and moved to Vail with his dad after high school. Edgar loves living in the Rocky Mountains because he loves nature and snow and the air and green trees of summer. He has considered Vail his home for many years. Chef Edgar’s food industry journey has encompassed most of the Vail Valley. He started with prep and butchering at Beano's Cabin and soon found himself on the hotlines at Splendido at the Chateau, Boxcar, and Elways, eventually leading to Sous Chef at Vintage. Although he was happy working at many of the best restaurants in the valley, he dreamt of one day working at Sweet Basil. The day came when he saw a posting on social media, he knew this was his chance. He proved himself as a line cook and when the opportunity came, he stepped up to Chef de Partie. Edgar has many unique tattoos and loves art. He paints and makes music in his free time. He also loves to go to the gym and shoot guns.
