Charles Fysh

Kitchen Manager

Charles Fysh, or aptly called “Fysh”, has been part of the Vail Valley scene since he first moved here in 1996. Like many, it was the skiing lifestyle that brought him here.

Born and raised in Berlin, New Hampshire, Fysh earned his Associates Degree in Culinary Arts which led to vast history in the culinary field before landing at Sweet Basil including a 6 year stint with a Sodexo based out of Vail Health. He was responsible for all aspects of the food service program there.

Fysh has been part of the Sweet Basil team since June 2021. His first 2 years were as a line cook in Sweet Basil’s kitchen. Since June of 2023, Fysh has been in his current position of Kitchen Manager.

When asked about what piqued his interest in the culinary field he states “the chaos” as well as being inspired by his great-grandmother’s cooking from an early age.

If Fysh is not at Sweet Basil, you can find him skiing, fishing, hiking, or spending time with his family.
