Veronica is a native Coloradan and born to be chef. She was raised in Fort Collins, Go Rams!, went to school and lived in Denver, and now calls Vail her home.
Chef Veronica knew young that she was interested in a culinary career. Family holidays were days full of cooking and truly made her happy. Watching the Food Network with her mom daily validated her passion for food and led to her first job as a sandwich artist. As a child, she ran a “Subway” out of her home, serving her delicious creations, mostly to her mom and dad. Her first paying job was at a burger joint, and here is where she learned she loved the kitchen: the adrenaline, atmosphere, and FOOD! So she decided to go to culinary school at Johnson and Wales University in Denver. Her chef journey with the Four Seasons eventually brought her to Vail, and she fits in nicely. Veronica loves the small town feel and is truly enthusiastic about the outdoors, something about being outside with nature brings her pure happiness. She enjoys hiking, camping, trail walks, paddle boarding, and skiing.
She is also a competitive volleyball player, loves her dog, reads cookbooks, and invents new dishes at home. Once she talked to Chef Paul, heard Sweet Basil’s story, and experienced the food, she knew this was the place for her.
